Ingredients for 20 servings:

  • 500 g flour
  • 2 tsp baking powder
  • 250 g butter
  • 200 g sugar, brown / rock candy
  • 50 g almond(s), grated
  • 2 eggs
  • ½ tsp cinnamon (ground)
  • ½ tsp clove(s) (ground)
  • ½ tsp cardamom (ground)
  • ½ tsp anise (ground)
  • 250 g icing sugar (for the glaze)
  • 1 egg(s), including the egg white (for the glaze)
  • 2 tsp milk, hot or hot water (for the glaze)
  • Sugar (granulated sugar), (for decoration

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Combine flour and baking powder and sift onto a baking board. Make a well in the center and add the brown sugar, almonds, eggs, and spices, then top with the cut butter. Knead all ingredients into a smooth dough and let it rest in a cool place for at least an hour. Roll out the dough and cut out various shapes. Place on a baking sheet lined with parchment paper and bake at 175°C (350°F) without preheating for about 12 minutes. Once cooled, glaze the cookies and sprinkle with crumbs or sugar.
