Ingredients for 1 servings:

  • 380 g flour (or wholemeal flour)
  • 350 g sugar
  • 60 g cocoa powder
  • ½ tsp baking powder
  • 3 tsp, heaped cinnamon powder
  • 1 tsp, heaped mace
  • 1 tsp, leveled cardamom powder
  • 1 tbsp, heaped clove powder
  • 2 eggs
  • 150 g butter or margarine
  • 100 g powdered sugar
  • lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

found in my grandmother’s cooking notebook from 1920

Combine flour, cocoa, baking powder, and all the spices (or more of each to taste!). Add the eggs and butter, and knead by hand (the dough is too heavy for a food processor) until it forms a silky, glossy dough. Roll out the dough on a greased and floured baking sheet to a thickness of about 1.5 cm and bake at medium heat (180 degrees Celsius) for about 25 minutes. Make a thick glaze from lemon juice and powdered sugar and spread it on the finished cake while it’s still warm. Immediately cut into small rectangles (cookies) and let cool. Store in tins and let sit for a few days to allow the flavor to develop further. The quantities given are sufficient for one baking sheet. These cookies may not look like much, but they’re a hit with family and friends!
