Savory pancakes with ham and cheese

Ingredients for 3 servings:

  • 125 g flour
  • 250 ml milk
  • 2 eggs
  • 1 tbsp, heaped parsley, chopped
  • 150 g raw ham (Black Forest)
  • 150 g Emmental or Gouda, grated
  • 3 tbsp sour cream
  • 1 m.-sized onion(s)
  • salt and pepper
  • butter

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Mix flour, milk, and eggs into a pancake batter, season with salt, and stir in finely chopped parsley. Let the batter rest for 30 minutes. Bake 3 to 4 thin pancakes in a little butter. Dice the ham and mix with the cheese, sour cream, and finely chopped onion. Season with pepper. Spread the filling on the pancakes. Roll up the pancakes, place them in a buttered baking dish, and bake in a preheated oven at 160°C (fan oven) for 20 minutes.
