  • 150 g maple syrup
  • 75 g brown sugar
  • 50 g butter
  • ½ tsp cinnamon powder
  • 1 pinch of clove powder
  • 1 pinch(s) cardamom powder
  • 1 pinch(s) of anise powder
  • 1 pinch(s) mace, ground
  • 50 g fig(s), dried, finely chopped
  • ½ lemon(s), untreated, zest
  • 1 egg(s)
  • 100 g rock sugar, finely crumbly
  • 300 g flour
  • 1 packet of baking powder
  • 30 g flour for the work surface
  • 1 egg yolk
  • 1 tbsp water
  • 100 g almonds, peeled and halved

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

makes approx. 50 pieces, approx. 2 WW PP (total 96 PP)

Heat the syrup, brown sugar, and butter while stirring until smooth. Allow the syrup mixture to cool slightly. Then stir in the spices, chopped figs, lemon zest, egg, rock candy, and a small portion of the flour mixed with baking powder. Then add the remaining flour and knead into a dough. Roll out the dough on a floured surface to a thickness of 1/2 cm and cut into approximately 4 x 4 cm squares (as desired). Place the Printen on a baking sheet lined with parchment paper. Whisk the egg yolk and water together and brush the Printen with it. Decorate with four almond halves (press lightly). Bake the Printen in a preheated oven at 175°C (top/bottom heat, fan oven: 150°C) for 15-18 minutes. The Printen will still be a bit soft at the end of the baking time. They can be stored in tins, if they last that long.
