Spicy Bacon Muffins

Ingredients for 1 servings:

  • 2 eggs
  • 250 g flour (wheat flour or wholemeal flour)
  • 1 packet of baking powder
  • ½ tsp baking soda
  • 150 g potatoes, boiled
  • 50 ml oil
  • 250 ml beer, light
  • 125 g bacon, diced
  • e.g. chives
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

On the buffet or as a side dish to onion soup, makes 12 muffins

Brown the bacon in a pan. Mash the cooked potatoes with a fork. Beat the eggs with a mixer until frothy. Add the flour, baking powder, baking soda, potatoes, oil, and beer and mix to form a smooth batter. Season with salt and pepper. Fold in the bacon and the chives, which have been cut into small rolls. Grease a muffin tin well or line it with paper baking cups and fill it with the batter. Bake in a preheated oven at 190°C (375°F) top and bottom heat or 175°C (350°F) fan-assisted oven for 25 to 30 minutes. Can be served lukewarm or cold. The muffins make a great addition to onion soup, a delicious side dish to salad, or are a great finger food at a buffet.
