Spicy Balkan-style bell peppers

Ingredients for 2 servings:

  • 3 bell peppers, red, yellow, green
  • 1 vegetable onion(s)
  • 2 garlic cloves
  • 1 tbsp paprika powder, sweet
  • 1 tsp paprika powder, hot
  • 1 can of tomatoes, pureed, 425 ml
  • n. B. Salt
  • Cayenne pepper
  • 1 tbsp agave syrup, alternatively honey
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash and trim the bell peppers, and cut into thin strips. Also trim and slice the onion into rings. Finely chop the garlic. Heat oil in a pan. Sauté the bell pepper strips until they begin to brown. Reduce the heat to medium. Add the onion and garlic and let them cook lightly. Add the paprika, let it cook lightly, and then add the can of tomatoes. Season to taste with salt and cayenne pepper; it should be quite spicy. Depending on the sweetness/acidity of the tomatoes, add about 1 tablespoon of agave syrup and let everything simmer with the lid uncovered for about 20 minutes.
