Spicy cabbage soup

Ingredients for 18 servings:

  • 1 head of white cabbage (approx. 1500 g)
  • 500 g leek
  • 5 liters of broth
  • 3 tbsp curry
  • oil
  • 2 apples (e.g. Boskop)
  • 2 meat sausages
  • 15 sausages (Mettwurst)
  • pepper
  • Thyme

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Clean and chop the cabbage. Clean the leek and slice into rings. Peel and roughly chop the apples. Dice or finely chop the bologna and Mettwurst. Heat oil in a large pot and sauté the cabbage. Add the curry. Top up with stock. Add the leek and apples and cook thoroughly. Season generously with pepper and thyme. Add the sausage pieces and continue cooking.
