Spicy carrot soup

Ingredients for 8 servings:

  • 800 g carrot(s)
  • 200 g potatoes
  • 2 onions
  • 2 red chili peppers
  • 2 tbsp butter, melted
  • 1 tsp orange peel, untreated, grated
  • 250 ml orange juice
  • 1 liter vegetable broth
  • 250 g sour cream
  • salt and pepper
  • 1 pinch(s) of sugar
  • 2 tsp lime juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Peel and roughly dice the carrots, onions, and potatoes. Halve the chili peppers lengthwise, deseed, and roughly chop. Place everything in a saucepan and sauté in butter. Add the orange juice, orange zest, and vegetable stock and bring to a boil. Cover and simmer over medium heat for 30 minutes. Purée the soup with a hand blender until smooth. Add the sour cream and bring back to a boil. Season to taste with salt, pepper, a pinch of sugar, and lime juice.
