Spicy casserole with smoked pork and peppers

Ingredients for 4 servings:

  • 700 g smoked pork
  • ½ bottle of white wine, semi-dry
  • 2 bell peppers, red
  • 1 onion(s)
  • 1 stalk(s) leek
  • 200 g mushrooms
  • 2 tbsp butter
  • 1 tbsp flour
  • 200 g tomato paste
  • 100 g cheese, grated (eg Emmental)
  • salt and pepper
  • marjoram
  • basil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Cut the smoked pork into thin slices, sauté in white wine, and let cool. Cut the vegetables into strips, clean and slice the mushrooms, and fry everything in a pan. Dust with flour, add tomato paste, and seasoning. Remove the meat from the white wine broth and add the broth to the vegetables. Bring to a boil briefly. Layer the meat and vegetables with the broth in a casserole dish. Sprinkle with grated cheese and dot with butter. Bake in a preheated oven at 200°C (top/bottom heat) for 30 minutes. This casserole tastes great with potatoes or simply with baguette.
