Spicy cauliflower patties

Ingredients for 12 servings:

  • 1 small cauliflower
  • 100 g feta cheese
  • 3 handfuls of Parmesan, grated
  • 2 egg yolks
  • 2 tsp sea salt
  • 1 tsp spice mix (paprika-chili)
  • 1 tsp spice mix (Magic Dust)
  • 2 tbsp breadcrumbs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Separate the individual florets from the cauliflower and process them into semolina in a food processor. I use the Thermomix on speed 4 for five seconds. Crumble the feta cheese and mix in. Grate the freshly grated Parmesan cheese and add it with the spices. After adding the egg yolk, mix the mixture thoroughly by hand. The amount of breadcrumbs depends on the moisture content. The mixture should no longer be watery. Preheat the oven to 200°C. The coins can easily be formed directly on the baking paper using 8 cm diameter dessert rings. To do this, add about two tablespoons to each dessert ring and press the mixture down. Then carefully peel off the dessert ring by pressing the stamp against the mixture. The cauliflower coins should be about one centimeter thick. The baking time is about 15 minutes. Pay attention to the browning. Let the coins cool slightly before removing them from the baking paper and carefully lift them off. The coins taste great with wild garlic pesto.
