Ingredients for 1 servings:

  • 100 g wheat flour
  • 100 g corn flour
  • 120 ml water
  • 1 pinch of baking powder
  • 5 tbsp olive oil
  • 2 pinches of nutmeg
  • 2 tsp salt
  • 1 pinch of pepper
  • 2 tbsp sesame seeds
  • 1 pinch of paprika powder
  • 1 pinch of sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Preheat oven to 220°C. Mix all ingredients and stir evenly. The batter should be thick and smooth. Add a little more water if necessary. Spread the batter in blobs and flatten slightly with a spoon. This will fill about two baking sheets and give them a very crispy finish. (You can also take the lazy option of simply spreading the batter evenly over the baking sheet. This will make it a little thicker and less crispy – but still delicious. In this case, simply break the batter into pieces once it has cooled.) Place the baking sheets in the oven and wait until they slowly turn golden brown; this should take about 10 minutes. During baking, once the surface has firmed up a bit, you can lightly spray them with oil and sprinkle with salt. After baking, they will still be soft and will take a few minutes to cool slightly and crisp up. However, you should remove them from the baking sheet as quickly as possible so they can get air on all sides and crisp up all over. Tip: You can also add a bit more sesame, poppy, or sunflower seeds. Just be careful that the mixture doesn’t form a dry lump when stirring, so add a little more oil and water to balance it out. Peanut or sesame oil also work well instead of olive oil.
