Spicy cucumber salad with ginger

Ingredients for 4 servings:

  • 400 g cucumber(s)
  • 2 bags of ready-made salad dressing mix (garden herbs with garlic)
  • 1 tbsp soy sauce, light
  • 1 small red chili pepper(s)
  • 50 g ginger
  • 1 small lime(s) (organic)
  • 6 tbsp germ oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and trim the cucumber, peel if desired, and slice thinly. Toss with a little salt and chill for 10-15 minutes. To make the salad dressing, combine 4 tablespoons of water and 1 tablespoon of soy sauce. Wash, trim, deseed, and finely slice the chili. Peel and finely chop the ginger. Stir both ingredients into the sauce along with the lime zest and oil. Place the cucumber slices in a sieve and let them drain. Toss with the salad dressing and season with a little more salt, if desired. Serve with fried shrimp.
