Spicy curry sauce

Ingredients for 4 servings:

  • 1 small can of tomato paste
  • some olive oil
  • 2 tbsp curry powder
  • 1 tsp, leveled chili or cayenne pepper
  • 250 ml orange juice
  • some broth, granulated
  • salt and pepper
  • 1 pinch(s) of sugar
  • 2 star anise
  • 1 tbsp applesauce
  • possibly water

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Sauté the tomato paste in olive oil, add the curry powder and chili (cayenne pepper) and sauté. Deglaze with orange juice. Stir in a little granulated stock, bring to a boil, and reduce to the desired consistency. Season with salt, pepper, sugar, and star anise. If desired, thin with water or olive oil and add another spoonful of applesauce.
