Ingredients
 

  • 3 Hard-Boiled eggs
  • 3 Pc. Gherkins pickles
  • Red pepper, 1/8 pod
  • 3 Basil leaves
  • 3 tbsp Mayonnaise 80% fat
  • 1 tbsp Extra virgin olive oil
  • 0,25 teaspoon Chilli flakes
  • 1 teaspoon Mustard medium hot
  • Salt
  • Some vinegar

Instructions
 

  • Chop the gherkins, basil and paprika very finely. Chop the hard-boiled eggs into small pieces.
  • Stir mayo with mustard, vinegar and chilli until smooth. Stir in paprika, pickles and basil.
  • Mix the chopped eggs with the dressing and add salt to taste.
  • if you don't like it so spicy, season with a little pepper.
  • also suitable for small party rolls, or, as with us, on sandwiches.
