great with game, an exceptional culinary gift

Carefully remove the stems from the elderberries and discard any unripe fruits. Peel and finely dice the ginger. Place all ingredients (except the gelling sugar) in a large saucepan and bring to a boil. Simmer over low heat for about 15 minutes. Add the gelling sugar and bring back to a boil, then simmer for about 5 minutes. While still hot, pour into twist-off jars, seal immediately, and leave to cool upside down. Note: When processing elderberries, always ensure that all unripe berries are discarded and the stems are carefully removed. Ripe berries are jet black and shiny. Unripe berries, the umbel stems, and the seeds contain sambunigrin, which can cause nausea and diarrhea. This ingredient becomes harmless when heated to at least 80 degrees Celsius.
