Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
beautiful culinary gift, very aromatic syrup
Carefully separate the elderberries from the stems and discard any unripe berries. Pour in the water and simmer for 20 minutes. Roughly grind the spices in a mortar and pestle. After the first simmering time, mash the elderberries slightly, add the sugar and spices. Bring back to a boil and simmer for 10 minutes. Strain through a sieve and immediately pour into twist-off bottles while still hot. Let the bottles cool upside down. The syrup tastes delicious in sparkling wine or mineral water. It can also be used in sauces or desserts. Note: When processing elderberries, always ensure that all unripe berries are discarded and the stems are carefully removed. Ripe berries are jet black and shiny. Unripe berries, the umbel stems, and the seeds contain sambunigrin, which can cause nausea and diarrhea. This ingredient becomes harmless when heated to at least 80 degrees Celsius.
