Spicy fish nuggets

Ingredients for 4 servings:

  • 800 g sea bass fillet(s) (Victoria sea bass fillet)
  • 2 eggs
  • Breadcrumbs
  • Flour Type 00
  • 50 ml cream
  • 1 pinch(s) of chili flakes, mild
  • Salt and pepper, white, freshly ground
  • Nutmeg, freshly grated, 1 large pinch
  • Clarified butter for frying

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Roughly dice the fish fillet. Whisk the eggs and cream until well combined. Season the egg mixture with a pinch of salt, grated nutmeg, chili flakes, and pepper, and whisk again thoroughly. Place the flour and breadcrumbs on separate plates. Coat the fish cubes one after the other, first in the flour, then in the seasoned egg mixture, and finally in the breadcrumbs. Repeat the process once, but this time without the flour. Melt the clarified butter in a large pan and fry the fish nuggets all over over medium heat. If desired, season the nuggets with freshly ground pepper and/or salt.
