Nam Pla – homemade Thai fish sauce

Ingredients for 1 servings:

  • 2 tbsp soy sauce, mild
  • 5 small anchovy fillets (or a can of sardines), plain, marinated in oil or water
  • n. B. sugar

Instructions

Great, super simple seasoning alternative to fish sauce

Chop and mash the anchovy fillets (or sardines). Mix the soy sauce with the anchovies in a cup and season with sugar to taste (I prefer fish sauce, which has a slightly sweet, fishy flavor). The mixture can be used immediately, but the longer it steeps, the more similar it becomes to nam pla. It can also easily spend a night in the refrigerator. A small note: 1 serving of this recipe corresponds to 1 tablespoon of nam pla. The amount may need to be adjusted depending on the recipe. Another small – less Asian – variation: I like to use 1.5 times the amount of anchovies and stuff them into various hollowed-out vegetables, such as tomatoes or zucchini. Bake in the oven with a little cheese – delicious.
