Ingredients for 4 servings:
- 250 g spinach, fresh (alternatively frozen)
- 8 slices of Leberkäse, 60g each
- 1 tbsp mustard, medium hot
- some nutmeg
- some pepper
- some salt (lemon salt)
- Cheese, grated Emmental
- some fat, for frying
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 16 minutes
Wash the spinach (thaw frozen spinach), remove the stalks, and pat dry (squeeze out frozen spinach). Spread the Leberkäse (meatloaf) with mustard, top with spinach, and season with nutmeg, pepper, and a pinch of lemon salt. Roll up from the long side and secure with toothpicks. Heat fat in a nonstick pan and fry the rolls briefly until nicely browned. Sprinkle with cheese, cover, and reduce the heat. When the cheese has melted, serve. If you want to prepare them in the microwave, omit the cooking fat and cook them at 600°C for 4 minutes. This goes well with vegetables or salad and rye sticks.
