Ingredients for 4 servings:

  • 3 tbsp water
  • ½ lemon(s), zest and juice
  • 2 tbsp sugar
  • 1 tsp sambal oelek
  • Peppermint, fresh
  • 1 piece(s) melon(s) (e.g. Cavillon)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

light salad for starters

Boil water, lemon zest and juice with sugar, then let cool. Peel and deseed the melon and cut into approximately 5 mm thick cubes. Chop the peppermint. Mix the sambal oelek and peppermint into the lemon sauce. Add the melon cubes and mix with the sauce. I serve this with grissini wrapped in prosciutto.
