Spicy mushrooms

Ingredients for 4 servings:

  • 500 g mushrooms
  • 4 onions
  • ¼ liter white wine
  • ¼ liter vinegar (fruit vinegar)
  • 1 liter of water
  • 250 g sugar
  • 1 tbsp mustard seeds
  • 1 tbsp juniper berries
  • Salt
  • 1 bunch tarragon
  • 1 tbsp pepper, whole grains

Working time approx. 20 minutes; Total time approx. 20 minutes

Delicious ingredient for appetizers and salads

Clean the mushrooms and briefly boil them in salted water. Peel and slice the onions. Bring the white wine, vinegar, and water to a boil in a saucepan with the sugar, peppercorns, mustard seeds, juniper berries, and 1 tablespoon of salt. Add the onions and simmer for 5 minutes. Divide the well-drained mushrooms and tarragon among preserving jars. Pour the hot liquid over them and let cool. Seal and let steep for at least 10 days. Also delicious with grilled fish and meat.
