Ingredients for 1 servings:
- 1.3 kg onion(s), red
- 1 piece(s) ginger
- 2 cloves garlic
- 500 g sugar
- 500 ml vinegar, e.g. apple or raspberry vinegar
- 2 tsp salt
- ½ tsp black pepper
- 1 tsp, leveled cinnamon powder
- ½ tsp cayenne pepper
- possibly starch flour, mixed with cold water
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 20 minutes
Slice the onions into thin rings and finely chop the ginger and garlic. Bring all ingredients, except the starch, to a boil in a saucepan. Simmer over medium heat until most of the liquid has evaporated. If you like, you can add a little starch towards the end to thicken the remaining liquid. Pour the jam into hot, sterilized jars, screw on the lids, and let cool upside down. The onion jam will keep for about two years and tastes wonderful with cheese, grilled food, or on a baguette spread with cream cheese.
