Ingredients for 2 servings:

  • 2 pork schnitzels
  • 2 potatoes, boiled
  • 1 tbsp yellow curry paste
  • 400 ml coconut milk
  • Salt
  • pepper
  • Oil (wok)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Heat the oil in a wok or suitable frying pan. Meanwhile, pound the schnitzel, season with salt and pepper, and cut into bite-sized pieces. Then fry in the hot fat, stirring constantly. After a few minutes, add the curry paste and fry briefly, then deglaze with the coconut milk. Now cut the cooked potatoes into bite-sized pieces, add them to the wok, and bring everything to a boil. Turn off the heat and season the sauce with salt and pepper to taste. Let the dish simmer for a while with the lid closed. We serve it with rice and cucumber salad.
