Spicy potato and lentil salad

Ingredients for 4 servings:

  • 150 g lentils
  • 500 g potatoes (salad), small, boiled, peeled, diced
  • 150 g apple, sour, peeled, pitted, diced
  • 1 bell pepper(s), red, diced
  • 150 g natural yogurt
  • 5 tbsp mayonnaise
  • 1 tbsp mustard, medium hot
  • 1 tbsp honey
  • 1 tbsp capers
  • 1 sprig(s) tarragon
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the lentils according to the instructions, then drain and set aside. Mix the ingredients starting with the natural yogurt to make a salad dressing. Season with salt and pepper, and add additional herbs if desired. Now stir in the potatoes, apple, and bell pepper. Finally, carefully add the lentils. Let them simmer for at least half an hour before serving.
