Spicy potato and walnut bread

Ingredients for 1 servings:

  • 400 g Flour (wholemeal spelled flour)
  • 300 g flour (wholemeal rye flour)
  • 1 cube of yeast, fresh
  • 1 tsp, heaped sugar
  • 250 ml water, lukewarm
  • 1 large potato(s) (peeled)
  • 150 g walnuts
  • 2 tsp salt
  • 2 tbsp bread spice mix
  • 2 tbsp caraway seeds (to taste)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Put both types of flour into a bowl and make a well in the bowl. Crumble the yeast into the well, sprinkle on the sugar and mix with a little lukewarm water. Lightly dust with flour and cover and let rise in a warm place for about 10 minutes. Meanwhile, coarsely grate the potatoes. Chop the walnuts. Add the potato strips and the remaining water, salt and spices to the pre-dough and knead everything thoroughly. Add a little more flour if the dough is too sticky. Cover the dough and let rise in a warm place for about 45 minutes. Add the walnuts and knead the dough thoroughly again. Grease a baking pan or line it with baking paper, place the dough in the pan and cover and let rise in a warm place for another 45 minutes. Preheat the oven to 200°C. Brush the bread with beaten egg yolk or milk if desired. Bake in the oven at 200°C for about 40 minutes until golden brown. Let cool briefly in the pan, then turn out onto a wire rack and let cool uncovered.
