Spicy potato bread

Ingredients for 4 servings:

  • 500 g potatoes
  • 125 ml milk, lukewarm
  • 350 g flour
  • 1 egg(s)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 ½ tsp sugar
  • 1 cube of yeast
  • 100 g bacon, streaky
  • 1 onion(s)
  • 1 bunch of chives
  • Fat for the mold

Instructions

Working time approx. 50 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 35 minutes

Finely grate raw, peeled potatoes, place them on a kitchen towel, twist them around, and squeeze them well (over the sink). Then stir lukewarm milk into the potato mixture. Then add flour, egg, olive oil, salt, sugar, and crumbled yeast. Knead everything into a smooth dough and knead until it pulls away from the bowl. Cover with a tea towel and let it rise for about 30 minutes. Dice the bacon and onions, cut the chives into rounds, and knead everything into the risen dough. Place the dough in a greased loaf pan, cover, and let it rise for another 30 minutes. Bake in a preheated oven at 200°C (top/bottom heat) for about 45 minutes. This spicy potato bread is perfect for cold and hot buffets. It’s also good for hearty snacks or just with feta cheese and olives.
