Spicy potato salad with nut kernels

Ingredients for 2 servings:

  • 250 g cheese (soft goat cheese)
  • 400 g jacket potatoes, from the previous day
  • 2 onions, red
  • 50 g cashew nuts
  • 3 bell peppers, green / red
  • Chives or parsley as desired
  • Salt, for the cooking water of the potatoes
  • 5 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • 2 tsp salt, bread salt (CK recipe below)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with goat cheese and buttered bread salt (CK)

Make a marinade with olive oil, apple cider vinegar, and butter bread salt. Dice the cheese and let it marinate for 1 hour. Peel and slice the boiled potatoes, cut the bell peppers into small strips. Slice the onions. Chop the herbs. Add everything to the marinated cheese and let it marinate for at least another 15 minutes. Season the salad to taste.
