Autumn is pumpkin season! How about spicy pumpkin waffles on a cold autumn day? Garnished with a few chopped nuts and maple syrup, they’re a welcome change from your usual waffles. Preheat and grease your waffle iron. Whisk the egg with buttermilk, canola oil, and molasses. Stir in the pumpkin. Mix the flour with baking powder, salt, and spices and stir into the wet ingredients. This will create a relatively runny batter. Divide the batter into portions in the hot waffle iron and bake until golden brown. Serve with maple syrup and nuts, if desired.
