Ingredients for 4 servings:
- 1 rabbit, cut up
- 150 g beans, dried white
- 3 cloves garlic, sliced
- 1 kg sweet potatoes
- 5 tbsp oil
- 1 chili pepper(s)
- 500 g tomatoes, ripe (plum tomatoes)
- ¾ liter chicken broth
- 2 bay leaves
- 1 tsp cumin, ground
- ¼ tsp nutmeg
- Tabasco
- 1 onion(s), coarsely chopped
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Soak the white beans in water overnight. Cook in the soaking water for about 45 minutes, add salt, and drain. Rinse with cold water. Peel and dice the sweet potatoes. Season the rabbit pieces with salt and pepper and fry in a pan until golden brown. Transfer the meat to a casserole dish. Sauté the onion and sweet potatoes in the frying fat and add to the meat. Dice the tomatoes and add them to the pot along with the garlic, bay leaves, beans, and broth. Cover the pot and simmer for about 30 minutes. Season to taste with Tabasco, cumin, and nutmeg.
