Spicy radish salad Cretan style

Ingredients for 4 servings:

  • 3 small radishes, white
  • 1 small cucumber(s)
  • 2 peppers, red, medium hot
  • n. B. Salt
  • 1 tsp white sugar
  • 2 tbsp red wine vinegar
  • 1 tsp black pepper, freshly ground
  • 1 tsp, leveled caraway seeds
  • 1 tsp black cumin
  • 1 tbsp seasoning mix (Greek salad seasoning)
  • 4 tbsp extra virgin olive oil
  • 4 tbsp orange juice
  • 4 medium-sized garlic cloves, fresh
  • 40 g feta cheese, shredded
  • e.g. feta cheese
  • e.g. Dill, fresh
  • e.g. tomato(s), sliced
  • n. B. Almond(s), white, sliced

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

Wash the fruit and vegetables. Trim both ends of the cucumber and radishes and coarsely grate them. Remove the stems and seeds from the peppers, halve lengthwise, and cut crosswise into thin strips. In a large bowl, combine the fruit and vegetables, season with salt, add the vinegar and sugar, stir, and let stand for 10 minutes. For the dressing, press the garlic cloves into a bowl, add the feta cheese and orange juice, and mix until smooth. Add the olive oil and all the seasonings. Add 4 tablespoons of the liquid from the salad mix, mix well, and add the dressing to the salad. Mix again before serving, divide among serving plates, and garnish with feta cheese, dill, tomato slices, and almonds, if desired. Serve with white bread.
