Spicy Red Wine Marsala Pears

Ingredients for 8 servings:

  • 4 pears, preferably Williams Christ
  • 16 cloves
  • ¾ liter red wine, sweet, preferably Pinot Noir
  • 100 ml Marsala
  • 4 tbsp sugar
  • e.g. lemon juice
  • 2 bay leaves
  • 1 cup whipped cream
  • 1 bag of cream stiffener

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes

Peel and quarter the pears, remove the cores, and drizzle with lemon juice. Combine the red wine with the Marsala wine and 4 tablespoons of sugar in a large saucepan and bring to a boil. Stick a clove into each pear quarter and add it to the red wine along with the bay leaves. Simmer for 10 minutes. Let cool and refrigerate until ready to serve. Whip the cream with the cream stabilizer until stiff peaks form. Arrange the pears in glass bowls and serve with a dollop of cream.
