Spicy rice with shrimp

Ingredients for 1 servings:

  • 20 g onion(s)
  • 2 tsp tomato paste
  • 1 tsp curry powder
  • 1 dashes lemon juice
  • 100 g shrimp
  • 45 g rice
  • 1 pinch(s) of salt and pepper
  • 150 g bell pepper(s)
  • 1 garlic clove(s)
  • 125 ml vegetable stock
  • some peanuts
  • Water (salt water)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the rice according to the package instructions. Clean the vegetables and cut them into small pieces. Heat the oil in a pot and sauté the shrimp, onions, and garlic. Briefly toast the curry powder before adding the remaining vegetables and sautéing. Then pour in the broth. Let the vegetables simmer on low heat with the lid closed for about 10 minutes. Season with salt, pepper, lemon juice, and tomato paste. Add the cooked rice to the pot. Mix everything well, sprinkle with the peanuts, and enjoy.
