Spicy spaghetti salad

Ingredients for 6 servings:

  • 250g spaghetti
  • 1 handful of cheese, grated
  • 3 Pepper, mild, pickled
  • 4 tomatoes, dried in oil
  • 1 small garlic clove(s)
  • 1 small onion(s)
  • 1 dashes apple cider vinegar
  • 2 shots of olive oil
  • salt and pepper
  • e.g. chili flakes
  • some honey

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 30 minutes

Bring plenty of salted water to a boil and add a good splash of oil. Cook the pasta al dente and drain. Stir the cheese into the still-warm pasta. Finely chop the peppers and add to the salad. Chop the onion as finely as possible. Make a sweet and spicy dressing with the onion, oil, vinegar, crushed garlic clove, possibly a little juice from the pickled peppers, pepper, salt, chili flakes and a little honey, using a hand blender if desired. Mix the dressing well with the salad. Chop the sun-dried tomatoes and add to the salad, mix again and refrigerate for about 2 hours to marinate. Toss the salad before serving and add more chili flakes if desired.
