Spicy spinach and tomato toasts

Ingredients for 8 servings:

  • 8 slice(s) bread(s) (loaf), wide
  • 4 m.-sized tomatoes
  • some olive oil
  • some sugar
  • 1 small jar of hot Ajvar
  • 3 cloves garlic
  • 450 g leaf spinach, frozen
  • 75 g cheese, grated
  • salt and pepper

Toast the bread, or brush it with olive oil and toast it on a baking sheet in the oven using the grill function, being careful not to burn it! Then spread it thinly with ajvar. Slice the tomatoes and fry them in a pan with olive oil. Sprinkle with a little sugar, turn them over, and let the sugar caramelize briefly. Distribute the tomatoes on the bread slices. Thinly slice the garlic and fry them briefly in the pan. Add the spinach, cover, and let it thaw. Season with salt and pepper. Spread the spinach on top of the tomatoes, sprinkle with cheese, and briefly place it under the oven grill.
