Spicy tomato and orange sauce

Ingredients for 4 servings:

  • 1 orange(s), untreated, organic
  • 2 sprigs rosemary
  • 2 garlic cloves
  • 800 g tomatoes, peeled (can)
  • Salt
  • 1 pinch(s) of sugar
  • 1 chili pepper(s), dried

Instructions

For the sauce, wash the orange in hot water, dry it, thinly slice the peel, and cut it into very fine strips. Rinse the rosemary, shake it dry, pick off the needles, and finely chop it. Finely crumble the chili pepper. Chop the tomatoes in the can. Heat the remaining oil and briefly fry the rosemary, garlic, and chili. Add the orange zest, juice, and tomatoes, and season with salt and sugar. Simmer the sauce uncovered over low heat for about 15 minutes until slightly thickened.
