Spicy turkey goulash

Ingredients for 4 servings:

  • 500 g turkey meat
  • 250 g red bell pepper(s)
  • 250 g mushrooms, small
  • 2 m.-sized onion(s)
  • 2 tbsp flour
  • 3 tbsp tomato paste
  • ½ tsp sambal oelek
  • 1 liter chicken broth (not instant!)
  • Clarified butter

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cut the meat into bite-sized pieces and sear them in a pan with hot clarified butter until nicely browned all over. Quarter the onions and mushrooms and add them, along with the roughly 1cm pieces of bell pepper. Add the tomato paste and fry. Dust with flour and deglaze with the chicken stock. Add the sambal oelek and simmer on low heat until the bell peppers are almost cooked. (They give the sauce a wonderful creaminess!) If the goulash doesn’t have the desired consistency at the end, I always add a little cornstarch. Ribbon noodles are delicious with this.
