Spicy Vegetable and Sesame Strudel

The perfect spicy vegetable and sesame strudel recipe with a picture and simple step-by-step instructions.

for the dough:

  • 50 g Chickpea flour
  • 50 g Buckwheat flour
  • 100 g Spelled flour type 630
  • 50 g Wholemeal spelled flour
  • 1 tsp Tartar baking powder
  • 1 tsp Sea-Salt
  • 200 g Yogurt or cottage cheese

for the filling:

  • 2 Pc. Leek sticks
  • 1 tsp Coconut oil
  • 200 g Coarsely grated carrots
  • 1 Pc. Egg, size L
  • 70 g Grated hard cheese, e.g. Parmesan, goat cheese, le Gruyere
  • 1 Msp Caraway powder
  • 1 pinch Nutmeg or mace
  • Salt pepper
  • 1 tsp Dijon mustard

additionally:

  • 1 tsp Curry powder
  • 1 Pc. Egg yolk
  • 2 tbsp Sesame
  1. First prepare the dough. To do this, mix the types of flour with baking powder and salt. Add the yogurt and knead everything into a smooth dough. Chill for about 30 minutes.
  2. In the meantime, the filling can be prepared. Cut the leek into half rings and sauté in the heated coconut oil. Fry for about 5 minutes, then stir in the grated carrots. Mix egg, mustard, salt, pepper, caraway seeds, nutmeg / or mace and cheese in a small bowl. Drain the vegetables so that the filling doesn’t become too runny and stir into the egg mixture.
  3. Roll out the dough thinly on a floured work surface, place on a baking sheet lined with baking paper and sprinkle with curry powder. Spread the filling lengthways in the middle. Fold the ends of the dough inwards and then fold the two long sides over each other. Brush with beaten egg yolk and sprinkle with sesame seeds.
  4. Bake in a preheated oven with circulating air at 180 degrees (alternatively top / bottom heat 200 degrees) on the middle rack for about 30 – 35 minutes until golden brown.

Tips:

  1. The strudel tastes warm and cold and goes well with leaf or cucumber salad. You can adjust the filling seasonally and use other quick-cooking vegetables. With different types of cheese, you can always give the strudel a different direction. I also use more cheese for mild cheeses, around 100 g. I think the paprika-pepper spread (from DM) to go with it is very tasty. Ajvar or herbal quark are also suitable companions. Non-vegetarians can put some diced cooked ham in the filling.
