Spicy Zucchini Feta Muffins

The perfect spicy zucchini feta muffins recipe with a picture and simple step-by-step instructions.

  • 225 g Grated zucchini
  • 150 g Feta
  • 50 g Butter or coconut oil
  • 0,5 bunch Parsley
  • 1 tbsp Feta seasoning, oregano, thyme, mint, coriander
  • 1 tbsp Tartar baking powder
  • 250 g Wholemeal spelled flour
  • 1 Msp Salt
  • 2 Pc. Eggs
  • 125 ml Milk
  1. Coarsely crumble the feta and finely chop the parsley. Whisk butter (if coconut oil is used, melt in a saucepan over low heat), eggs, salt and milk. Mix the flour and baking powder and stir in. Fold in the parsley, feta, shredded courgette and dried herb mixture.
  2. Spread the dough on muffin molds and bake in the preheated oven on the middle rack at 200 degrees top / bottom heat for about 25 – 30 minutes.
