Spicy Zucchini Feta Muffins
The perfect spicy zucchini feta muffins recipe with a picture and simple step-by-step instructions.
- 225 g Grated zucchini
- 150 g Feta
- 50 g Butter or coconut oil
- 0,5 bunch Parsley
- 1 tbsp Feta seasoning, oregano, thyme, mint, coriander
- 1 tbsp Tartar baking powder
- 250 g Wholemeal spelled flour
- 1 Msp Salt
- 2 Pc. Eggs
- 125 ml Milk
- Coarsely crumble the feta and finely chop the parsley. Whisk butter (if coconut oil is used, melt in a saucepan over low heat), eggs, salt and milk. Mix the flour and baking powder and stir in. Fold in the parsley, feta, shredded courgette and dried herb mixture.
- Spread the dough on muffin molds and bake in the preheated oven on the middle rack at 200 degrees top / bottom heat for about 25 – 30 minutes.
