Vegetable Spelled Muffins
The perfect vegetable spelled muffins recipe with a picture and simple step-by-step instructions.
- 1 piece Sweet red peppers fresh
- 2 piece Spring onions fresh, cut
- 2 tablespoon Olive oil
- 150 g Lowfat quark
- 60 ml Milk
- 1 piece Organic egg (L)
- Salt pepper
- 200 g Organic whole grain spelled flour
- 2 teaspoon Baking powder
- 0,5 teaspoon Baking soda
- 35 g Leerdammer or Emmental
- Cut paprika and spring onions into small pieces and sauté in olive oil for about 5 minutes over medium heat and set aside.
- Preheat the oven to 200 degrees. Rasp cheese.
- Mix the quark, milk and egg in a bowl, add the grated cheese and vegetables from the pan and season with salt and pepper. In a second bowl, mix the flour with the baking powder and baking soda. Pour the flour mixture into the quark mixture and stir everything well.
- Line the muffin tin with paper liners and fill in the batter. Smooth the dough with a teaspoon dipped in water. Bake for 25 minutes.
- The muffins have a nice crust and are soft and fluffy on the inside. Only the paper is difficult to remove, so it is essential to brush the paper with butter or only butter the shape without paper liners. I will still test that.
- Garnish with goat cream cheese and onion rings and radish slices.
