Spicy Zucchini Muffins

The perfect spicy zucchini muffins recipe with a picture and simple step-by-step instructions.

  • 1 Pc. Small zucchini
  • 50 g Walnuts
  • 75 g Parmesan
  • 225 g Whole grain spelled flour
  • 60 ml Olive oil or melted coconut oil
  • 3 tsp Tartar baking powder
  • 100 ml Oat milk
  • 75 g Cottage cheese or cottage cheese
  • 1 Pc. Egg
  • 4 tbsp Sesame
  • 1 tbsp Pizza seasoning or dried Italian herbs
  • Salt pepper
  1. Coarsely grate the zucchini and squeeze out with your hands. Chop the walnuts and grate the Parmesan. For the dough, briefly stir all the remaining ingredients into a dough. Fold in the salts, pepper and the grated zucchini, chopped walnuts and grated cheese.
  2. Pour the batter into muffin cups. Depending on the size of the molds, there will be between 6 and 9 muffins. Bake in the preheated oven on the middle rack at 180 degrees top / bottom heat for about 25 – 30 minutes. The muffins taste warm and cold.
