Spicy Zucchini Muffins
The perfect spicy zucchini muffins recipe with a picture and simple step-by-step instructions.
- 1 Pc. Small zucchini
- 50 g Walnuts
- 75 g Parmesan
- 225 g Whole grain spelled flour
- 60 ml Olive oil or melted coconut oil
- 3 tsp Tartar baking powder
- 100 ml Oat milk
- 75 g Cottage cheese or cottage cheese
- 1 Pc. Egg
- 4 tbsp Sesame
- 1 tbsp Pizza seasoning or dried Italian herbs
- Salt pepper
- Coarsely grate the zucchini and squeeze out with your hands. Chop the walnuts and grate the Parmesan. For the dough, briefly stir all the remaining ingredients into a dough. Fold in the salts, pepper and the grated zucchini, chopped walnuts and grated cheese.
- Pour the batter into muffin cups. Depending on the size of the molds, there will be between 6 and 9 muffins. Bake in the preheated oven on the middle rack at 180 degrees top / bottom heat for about 25 – 30 minutes. The muffins taste warm and cold.
