Ingredients for 1 servings:
- 2 handfuls of leaf spinach
- 1 tbsp oil
- 2 stalks of spring onion(s), cut into rings
- 5 basil leaves
- 1 egg(s)
- 1 shot of milk
- e.g. salt and pepper
- chili powder
Instructions

Heat the oil in a pan and sauté the spring onions. Add the spinach leaves and cook over medium heat, turning occasionally, until wilted. Meanwhile, whisk the egg with a splash of milk, chop the basil leaves, and add them. Season with salt, pepper, and chili powder to taste. Reduce the heat to low and pour the egg mixture over the spinach. Let it set for about 4 minutes, shaking the pan occasionally to prevent it from burning. Finally, turn the omelet over and cook briefly on the other side. Done!
