Spinach and minced meat lasagna with fried eggs

Ingredients for 4 servings:

  • 2 onions
  • 2 cloves garlic
  • 500 g minced meat
  • 700 g creamed spinach, frozen
  • 150 ml water
  • 9 lasagna sheets
  • 200 g feta cheese
  • 6 eggs
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Thaw the creamed spinach. Peel and dice the onions and garlic. Fry in olive oil. Add the minced meat and fry until tender. Add the thawed creamed spinach and bring to a boil. Add the water so the spinach and minced meat sauce isn’t too thick. Season with salt, pepper, and nutmeg. Grease the bottom of a medium-sized baking dish with oil and place three lasagna sheets in it. Pour the spinach and minced meat sauce on top, crumble the feta cheese, and sprinkle over the sauce. Repeat this process one more time, finishing with the sauce. Bake in a preheated oven at 200°C (top/bottom heat) for 10 minutes. Then remove the lasagna, crack six fried eggs on top, season, and bake for another 10-15 minutes.
