Spinach and shrimp whole wheat spaghetti

Ingredients for 2 servings:

  • 200 g whole wheat spaghetti
  • 500 g spinach, fresh
  • 250 g shrimp(s)
  • 400 ml milk
  • 400 ml vegetable stock
  • 30 g Parmesan
  • salt and pepper
  • basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Sauté the shrimp in a pan and season with salt and pepper. Remove from the pan and add vegetable broth and milk. Cook the pasta until al dente. Stir in the spinach, season to taste, and stir in the Parmesan cheese. Once the cheese has melted, stir in the shrimp and serve. You can also use regular spaghetti. 600 kcal per serving.
