Spinach dumplings

Ingredients for 4 servings:

  • 200 g dumpling bread or rolls from the previous day, in thin slices
  • 80 g flour
  • 3 eggs
  • 150 g mountain cheese, grated
  • 450 g creamed spinach
  • 1 onion(s)
  • pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Rest time approx. 16 hours; Cooking/baking time approx. 25 minutes; Total time approx. 16 hours 45 minutes

according to the tradition of the Alpine Club PAN

Thaw the frozen spinach on the dumpling bread. Chop the onion and sauté. Stir all ingredients into the spinach and season with pepper and a little nutmeg. Prepare 12-16 hours in advance and let stand. Shape the dumplings as desired and let them simmer in boiling salted water for about 25 minutes. Alternatively, prepare in a steamer. Serve with melted butter and grated Parmesan cheese.
