Ingredients for 4 servings:

  • 375 ml vegetable broth
  • 150 g wheat, coarsely ground
  • 75 g hazelnuts or almonds, roughly chopped
  • 150 g cheese (Gouda)
  • 3 tbsp yeast flakes (health food store or organic store)
  • 3 eggs
  • 1 m.-sized onion(s)
  • 1 bunch of parsley
  • 1 tbsp butter
  • 1 m.-large bell pepper(s), red
  • herbal salt
  • basil
  • 1 tbsp breadcrumbs (whole grain) if needed
  • 5 tbsp oil for frying
  • pepper
  • Oregano, dried

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Wheat patties

Cook the crushed wheat in the broth for about 5 minutes, stirring. Then remove from the heat and let it swell for 20 minutes. Cut the Gouda into small cubes. Peel the onion and chop it finely along with the parsley. Melt 1 tablespoon of butter. Sauté the chopped onion and chopped parsley briefly in it. Trim and wash the bell pepper and cut it into small cubes. Place all ingredients in a bowl, mix well, and season to taste with the spices and herbs. Form the batter into about 12 patties and fry in the heated oil until crispy on both sides. Serve with a green salad. They’re just as delicious as meatballs or meatballs.
