Ingredients for 2 servings:

  • 150 g spinach, fresh or frozen
  • 1 handful of cashew nuts
  • 2 tbsp olive oil
  • 1 tbsp sunflower seeds
  • 2 cloves garlic
  • 2 spring onions
  • some salt
  • some pepper
  • e.g. Paprika powder, hot
  • Pinch of nutmeg, freshly ground
  • e.g. pine nuts
  • Mint, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

vegan, easy, quick

Puree the ingredients with a hand blender or in a blender until smooth. Season the pesto to taste. Mix with al dente pasta and serve.
