Tomato-basil pesto with cashews and garlic

Ingredients for 2 servings:

  • 1 jar of tomatoes, dried in oil, approx. 180 g drained weight
  • 3 cloves garlic
  • 1 handful of cashews
  • 1 handful of basil
  • oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Vegetarian

Blend the sun-dried tomatoes, the oil from the jar, the garlic, basil, and cashews in a food processor until creamy. Transfer to small jars, adding a little more oil if necessary to coat. Spoon over hot pasta as a pesto.
