Spinach pizza with Gorgonzola

Ingredients for 1 servings:

  • 400 g flour
  • 1 packet of dry yeast
  • 200 ml water, lukewarm
  • 1 tsp salt
  • 350 g leaf spinach, frozen
  • 1 shallot(s), finely chopped
  • 150 g Gorgonzola, crumbled
  • 1 small can of tomatoes, chopped
  • 200 g mozzarella, grated
  • 2 garlic cloves, crushed
  • oregano
  • salt and pepper
  • olive oil

Instructions

Working time approx. 30 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Mix all the ingredients for the dough and knead into a smooth dough. Let it rise until it has doubled in size. Sauté the shallot in a little oil until translucent. Add the spinach and let it thaw over low heat. Add the Gorgonzola and simmer until the cheese has melted. Season with oregano, salt, and pepper. Roll out the pizza dough on a baking sheet and spread with the tomatoes. Spread the cooled spinach mixture over it and sprinkle with the mozzarella. Mix the garlic with 2 tablespoons of olive oil and drizzle over the pizza. Bake in an oven preheated to 220°C (top/bottom heat) for about 10 minutes.
