Ingredients for 4 servings:
- 400 g flour
- 4 eggs
- 2 tbsp oil
- 250 g leaf spinach
- 1 clove(s) garlic
- 400 g cream cheese
- 4 tbsp butter
- 1 lemon(s)

For the ravioli dough, mix together flour, eggs, oil, and salt. If the dough isn’t soft enough, add a little more water. Knead the dough well, shape it into a ball, and wrap it in cling film. Wash, trim, and chop the spinach. While still dripping wet, place it in a pan and sauté until it collapses. Peel the garlic clove and press it through a garlic press into the pan. Remove the spinach from the pan, mix it with the cream cheese, and season. Roll out the dough thinly on a floured surface and cut it in half. Place small portions of the spinach filling at intervals on one half. Place the other half on top and press the dough firmly around the filling. Cut out rectangular ravioli with a pastry wheel or knife. Press the edges of the dough together with a fork. Melt the butter. Wash the lemon and pat it dry. Peel the zest thinly, chop it, and add it to the butter. Season with lemon juice. Cook the ravioli in boiling water. When they rise to the top, remove them, drain them and toss them in the butter.
