Spinach salad with halloumi and figs

Ingredients for 4 servings:

  • 400 g fresh leaf spinach
  • 3 oranges
  • 3 figs, fresh
  • 400 g cheese (halloumi, Greek grilled cheese)
  • 1 handful of basil, fresh
  • 100 ml olive oil
  • 2 tbsp Balsamic vinegar (Crema di Balsamic vinegar)
  • 1 tbsp vinegar (raspberry vinegar)
  • 1 tsp mustard (Dijon mustard)
  • possibly fresh orange juice, if required
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the spinach leaves and remove the stalks. Wash the basil leaves and slice them into strips. Mix the basil and spinach together. Halve the figs and then thinly slice them. Peel the oranges with a knife and remove the orange segments. Arrange the figs and oranges on top of the salad or toss them with the salad. Dice the halloumi and fry in hot oil until golden brown. It’s best to serve it over the salad while it’s still warm. For the dressing, mix together the olive oil, balsamic vinegar, raspberry vinegar, and Dijon mustard. Add a little fresh orange juice, if desired, and season with salt and pepper. Pour the dressing over the salad and serve.
